Whole food Salad made for children by children Tempeh Salad with peanut sauce/ (sunbutter) Sauce 1/4 cup warm water 1/4 cup peanut butter or sunflower butter 1/2 tsp fresh ginger root crushed 1 Tblsp Tamari sauce or coconut aminos 1/2 Tblsp rice vinegar 1 Tblsp lime juice or 1/2 lime squeezed Red pepper flakes optional Blend above ingredients to make a sauce leave aside Marinated Tempeh for Glazed Tempeh: Ingredients: - 8 oz soy or rice grain tempeh - 1/4 cup tamari sauce or liquid aminos - 1 tsp tomato paste or garlic chili sauce - 1 Tbsp maple syrup Instructions: 1. Heat a pan and glaze tempeh until heated through. Assembly in a huge plate 8 oz Arugula 1 cup cooked Quinoa- use a few tblsp Purple cabbage Tempeh Few walnut pre soaked and drained Raw Cashews Vibrant Kumquat salad 2. In a large bowl, combine arugula, sliced kumquats, halved cherry tomatoes, sliced cucumbers, shredded purple cabbage, diced apple, and green moong sprouts (optional) if using. 3. Season with Celtic salt if desired. 4. In a separate bowl, mix apple cider vinegar or balsamic vinegar with hummus to create the dressing. 5.
