Peel and cut sweet potato, mince garlic cloves, chop chili pepper, chop cilantro. In pot simmer onions, garlic, chili in veggie stock for 10 minutes or until onions are soft. In a small bowl make a paste with cumin and 1 TSB veggie broth. Stir into pot and then add sweet potato and remaining stock. Cook on low medium until sweet potato is soft. Add in red peppers and corn. Cook until red peppers are al dente. Add in more stock if necessary. Blend half of soup and add back in. Add in cilantro and lime juice. Cold soba noodle salad-gluten free Soba noodles (I get organic King Soba noodles gluten and wheat free, buy them online) 3-4 sliced scallions 6-8 halved grape or cherry tomatoes, 1 finely diced Persian cucumber ½ chickpeas or any other bean Jalapeño is you want spicy 2/3 sliced mini peppers Sliced olives-plain or calamari Sprinkle of hemp seeds Chopped parsley or cilantro or any herb of choice Cook soba noodles following instructions on package 2 choices of dressing: 1-2 TBS lemon juice 1-2 TBS red wine vinegar Or Ginger Nyomu Sauce Ginger Soy Sauce 2 TBS Tahini 1 TBS low sodium soy 1 clove garlic 1 TBS fresh ginger 2 TBS water 1-2 TBS lemon juice Blend in blender-may need more water.
