Thai inspired Mung bean noodles with vegetables Guest cook: Kerisha Naidoo Aneesh Ponnaluri (4) Guest appearance: Ajay Ponnaluri (2) Veg Thai Noodles Ingredients: 3 tablespoon sesame oil or any high heat oil 1 onion diced 1 -2 green chillies if prefer spicy 3 cloves of garlic crushed 1” small piece of ginger sliced finely 1” small piece of galangal crushed 1 stick lemon grass cut into pieces 2-3 kafir lime leaves 1 bottle Thai green curry paste 1 red pepper capsicum sliced 1 green pepper capsicum sliced 1 carrot sliced 1 eggplant Handful of snap peas Broccoli florets 1 can coconut milk Salt to taste (Any other veg you’d like to add) Fine mung bean noodles or rice noodles Coriander first garnish 1/2 cup walnuts, cashews. Nuts crushed Thai basil if handy White and black sesame seeds for garnish Method: In a wok, heat oil, add in onion, chilli, garlic, ginger and galangal kafir lime leaves and lemon grass . Add in Thai curry paste - fry off for 2-3 min and then add cut veg. Keep veg slightly crunchy/crispy and add coconut milk. Add noodles and cover until cooked then mix so that the noodles absorbs the liquid. Add salt to taste, add walnuts/cashew and garnish with coriander leaves/cilantro or Thai Basil and white/black sesame seeds. Nb: if using Thai green curry paste one can leave out kafir leaves, galangal and lemon grass. Do remember these fresh added do add lots of great flavours .
