Episode 100 June 2021 Bhajia and chick pea flour pancake 1 cup Chick pea flour 1/2 cup spelt flour (optional ) 1 Tblsp rice flour (optional ) 1 cup grated vegetable (I used carrots zucchini potato ) 1/2 Cup malibar spinach ( any greens can work) 1/2 cup finely chopped onion 1/2 cup finely chopped cilantro 1/4 tsp ground cumin Powder 1/4 tsp coriander powder 1/4 tsp chili powder 1 green chillie ground Salt to taste 2 tsp baking powder Oil for deep frying - moderately hot To the dry ingredients add all the vegetables herbs and spices. Mix It all together, add a little water at a time until you get a thick batter. Drop spoonfuls of batter into hot oil. Tending to it all the time . Once it floats and takes on a golden color the Bhajia is ready. Take a non stick pan. Heat pan moderate hot. Make batter a little weaker than the frying batter . Drop spoonful of batter in the pan, spread to form pancakes Look at it, as soon as the top looks a little bubbles and slightly dry, turn and continue cooking , within a couple of minutes, this very healthy, very delicious protein pancake with the rainbow of colors vegetable is ready. Enjoy - pancakes were just as delicious. Notes spelt flour can be omitted and chickpea flour used 1 1/2 cups Rice flour - makes Bhajia crispy. Still good without I almost alway use grated potato and add what ever vegetable on hand like green, red and yellow peppers, encourage children to use colors of the rainbow .
