Below are the recipes Sindhi Koki served with yoghurt, papadum and Zucchini We serve Koki with Plain yogurt sprinkle with salt and black pepper and Papad / pickle Sindhi Koki 2 cups of wholewheat flour , one small onion diced 3/4 tsp spoon of salt , 1 tb of black pepper , 2 green chillies , 2 Tblsp spoons of ghee , Cilantro is optional adds flavour Mix all with water Dough should not be soft Roll the small ball of dough and Cook on a pan for few Minutes and Roll again and cook fully applying oil NB: optional: good way to add veg in, Spinach etc. Onions peppers greens all finely chopped. Can add green chills as well. More cilantro more flavor Seasoning - cumin sesame seed salt turmeric seasalt Add oil while kneading. Flour mix; Wheat flour little bit of jowar/sorghum and buckwheat flour. Ground flaxseed Zucchini cooked 1 medium Zucchini salt to taste 1 tsp oil 1/2 sprig curry leaf 1/8 tsp cumin seed , 1/4 tsp black Gram (urad dal) red chilli powder 1/8 spoon of turmeric powder Cilantro , Heat oil. Add cumin and Black gram cook for few seconds then add curry leaves all spices and cut Zucchini and cook on simmer until desired doneness 5 - 10 minuets and Garnish with Cilantro.
