May 2020 with Shirley Naidoo, Claude and Aneesh.  Savoury Cabbage cake, cabbage and pea dal , cabbage savoury, cabbage salad, banana cake and whipped cream  INGREDIENTS Savory cabbage casserole/cake 3 cups finely chopped cabbage1 1/2 cups gram flour ( besan)1/2 cup buttermilk, plus more as needed1/2 teaspoon powdered turmericpinch asafoetida (hing)1 medium green chilly, finely chopped1 tsp red chile powder1 1/2 teaspoons salt1 teaspoon cumin seeds1/2 teaspoon ground cumin1 teaspoon ground coriander seeds 2-inch piece ginger, grated1 fresh cilantro5 oz vegetable oil Mix all ingredients together To get4/5 a thick cake like batter. Bake moderate oven for approx. 45 minutes, until skewer comes out clean. Leave to cool cut and serve with a sprinkling of cilantro Cabbage bake Cabbage curry 2 Tblsp avacado oil 1/2 tsp Mustard seeds 1 sprig Curry leaves 1 Onion chopped 1 clove garlic 1/4 tsp turmeric 2 dry chili - 1/2 tsp chili powder 1/2 cup peas. 3 cups Cups cabbage shredded Cut cabbage Take thick bottom sauce pan. Add 3 tbsp Heat pot add oil. Add mustard seeds once splatter add onion, fry until translucent Add garlic and other seasoning Add chillies to seasoning and sauté them for about a minute. Add peas Then add cut cabbage & sea salt Cover and cook on medium till it is soft and slightly crunchy about ten minutes. Don’t overcook. Enjoy it with rice, roti or by itself Cabbage Salad 9 oz cabbage sliced fine 1/2 tsp mustard seeds 1/4 tsp Jeera 1/4 tsp urad dal 1 Green chilie Lemon juice Pepper Salt Grated coconut Curry leaves Optional honey or maple syrup Cabbage and dal 1 cup dal Soak boil until very soft. Whilst boiling dal add 1 tomato , 1 onion and 3 cloves garlic Once it looks like soup remove from stove 1/2 cup cabbage Method Heat oil Mustard seeds Methi Jeera Curry leaves Green chili 2 dry chilies Cook cabbage for 10 minutes and then add dal. Simmer Garnish with coriander leaves Banana Cake 3 very ripe bananas Smash , add to liquid. 1 cup pastry flour 1/4 tsp cinnamon 1/4 tsp salt 1/4 tsp baking powder 1 cup unsweetened apple sauce 2 Tblsp ghee 2 Tblsp maple syrup Mix liquid together Add to dry ingredients Fold into all together Add 2 Tblsp raisins Preheat oven 350*F. Place batter in muffin pan . This makes 24 mini. Cakes . Bake 15 - 20 minutes till done making banana cake batter Peel and chop the bananas. Add them to a bowl and mash them with a fork. You can also use a blender to mash the bananas. Add sugar, oil and vanilla extract. Stir very well so that the oil mixes with the banana puree and the sugar dissolves. Sieve whole wheat flour, baking soda, baking powder, salt directly in the bowl. You can also sieve these separately and then add them to the wet ingredients. Fold the dry ingredients into the wet ingredients very well. Add the chopped walnuts and fold again. Apart from walnuts, you can also add raisins, pistachios or any dry fruits of your choice. Chocolate chips or cacao nibs can also be added. Pour the batter in a greased or lined loaf pan ( 7.5 x 4 x 2.5 inches) or round cake pan (7.5 x 2 inches). www.actontv.org
