Episode 91 Sept 2020 Guest : Pervin Chowdhury- travel through Bangladesh: bhuna khichuri, begun bhaji, shim ar aloo bhaji and shujir halua Lentil Rice ( Bhuna Khichuri) -2 cups of basmati rice -1/2 cup canola or vegetable oil -1 cup of orange lentils -1/2 medium onion -3 tsp of shan pilau biryani spice - 1 cinnamon stick - 4 cardomam seeds -1 tsp cumin -1 tsp coriander -1 tsp garam masala -1/2 tsp turmeric -1/2 tsp of ajina moto -1/2 tsp sugar -1-1/2 tsp salt Fried Eggplant (Begun Bhaji) -1 medium eggplant -1/2 cup oil -salt to taste -2 tsp turmeric -3 tsp chili powder -1/2 tsp of garam masala Slice eggplant. Make slits in eggplant. Mix masala onto egg plant slices. Fry both sides in shallow oil until slices are soft and ready to eat. Potato and green bean stir fry (shim ar aloo bhaji) -3 small potatoes -1/2 Lb frozen of French cut green beans -1/2 medium onion -2 tsp turmeric -salt to taste -up to 4 thai chilis Sooji (shujir halua) 1 cup soji 4 pods. Cardamom 2 cups water 4 Tblsp sugar 1/2 stick butter (2 oz) Pinch salt 2 Tblsp roasted slivered almonds (optimal) 2 Tblsp golden raisins 1 drop orange colouring Melt butter in saucepan. add cardamom Roast semolina On low heat until aromatic. Add sugar and continue to stir. Add water and colour continue to sir. Lastly add nuts and raisins. Once cooked leave to cool, easy to hand. Cool slightly. Cut to desired shape. www.actontv.org
