Scrambled Tofu with Red Pepper, Tomato and Spinach Serves: 1 Ingredients: 2 scallions, diced 1/2 cup finely chopped red bell pepper 1 small tomato, chopped 1 clove garlic, minced or pressed 7 ounces firm tofu, drained and crumbled 1 teaspoon Dr. Fuhrman's MatoZest (or other no salt seasoning blend, adjusted to taste) 1 tablespoon nutritional yeast 3 cups coarsely chopped baby spinach 1/2 teaspoon coconut aminos Instructions: In a skillet, over medium/high heat, water sauté scallions, red pepper, tomato, and garlic for 3 minutes. Add remaining ingredients and cook for another 5 minutes. If desired, serve with Dr. Fuhrman's no-salt, no-sugar Ketchup.
