Library Readings for children: Super Foods For Super Kids joyofcolorfulcooking.com joyofcolorfulcooking: Instagram Sweet Potato Black Bean Burgers- Dr. Joel Fuhrman 6 servings ½ cup raw unsalted almonds 1 ½ cups cooked unsalted black beans ¾ cup mashed sweet potato ½ cup diced red onion ½ jalapeno, diced 3 TBSP chopped cilantro 1 tsp. garlic powder ½ tsp. black pepper 2 tsp. apple cider vinegar 1 TBSP Fresh lime juice 3 TBSP nutritional yeast Old fashioned oats if need to adjust consistency Place almonds in food processor and grind to fine powder. Add remaining ingredients except for oats and pulse to combine. Form into 6 burgers. If too wet add in some oats. Place on parchment paper on baking sheet. Bake at 350 degrees for 30 minutes or until browned. Serve with sliced tomatoes, onion, lettuce, avocado on 100% whole grain pita, bread slice, or tortilla.
