Desserts To Live for - Talia Fuhrman Joy of Colorful Cooking/ Acton TV www.joyofcolorfulcooking.com FLOURLESS ALMOND GINGER COOKIES MAKES 17 COOKIES PREHEAT 350°F PREP TIME 30 MINUTES COOK TIME 10-12 MINUTES 1 teaspoon ground ginger 1/2 teaspoon cinnamon 1/2 teaspoon nutmeg 1/2 teaspoon ground cloves 1/2 cup almond butter 1/2 cup non-dairy milk of choice 2 teaspoons baking powder 14 medjool dates, pitted 1/2 cup almond flour* *You can purchase almond flour or make your own. Simply grind up raw almonds in a high-powdered blender or food processor until a fine powder forms. Don't blend too long - too much blending will churn the powder into butter. Preheat oven to 350 degrees F. In a food processor, combine ginger, cinnamon, nutmeg, cloves, almond butter, non-dairy milk, baking powder and dates. Process until all ingredients have been thoroughly mixed. Add almond flour and process again for a minute or so until a smooth dough is formed. The dough will be a bit dense, but this is okay. Pour the cookie dough in a large mixing bowl. If you desire perfectly shaped cookies, freeze the moist dough for 20 minutes before shaping into balls and flattening into cookies. Alternatively, you can simply use the dough straight from the food processor. Using a large spoon or your hands, scoop up about three tablespoons of batter and roll it into a ball. Flatten the ball to create a cookie and place on a baking sheet. Repeat this step until all of the cookies are formed. If desired, decorate the tops of each one by using a large fork and pressing the fork down in the middle of each cookie and then again perpendicularly (see photo). Bake for 10-12 minutes. Cool for about 10 minutes and they will be ready for eating. Do not overbake. The final cookies should be a bit fluffy rather than hard. Overbaking will result in hard cookies. The cookies will harden overnight. These are entirely flourless, for almond "flour" is simply ground-up almonds. These cookies are great when warmed in the oven. Of course, we need our veggies and fresh fruit, but scrumptious cookies that contribute to good health can certainly be a part of what makes us shine brightly. http://www.actontv.org
